The Recipe for fluffy yeast buns with custard filling


For the dough:

• 500 g of all-purpose flour • 10 g of dry yeast (instant) or 40 g of fresh yeast • 240 ml of warm milk • 3 medium egg yolks • 110 g of sugar • 50 g of butter, melted and cooled (1/4 stick) • A pinch of salt • Egg whites for brushing the buns • 1 teaspoon of vanilla extract • A pinch of salt for taste • A packet of sultan raisins

For the crumble topping:

• 30 g of butter • 30 g of sugar • 50 g of all-purpose flour • Powdered sugar for sprinkling

For the custard filling:

• 1 packet of custard powder (sugar-free or with sugar) • 500 ml of cold milk • 2 tablespoons of sugar (or sugar-free)

Preparation of the Dough:

  1. In a bowl, mix warm milk with yeast and a teaspoon of sugar to create a starter. Leave it for a few minutes to rise.
  2. To the risen yeast, add the remaining sugar, butter, salt, egg, and vanilla extract. Mix thoroughly.
  3. Gradually add the flour while kneading the dough until it becomes elastic and smooth.
  4. Add sultan raisins.
  5. Cover the bowl with a cloth and let the dough rise for about 1 hour, until it doubles in size.

Preparation of the Custard Filling:

  1. Prepare your favourite custard powder according to the instructions on the package.
  2. Let the custard cool down.

Shaping and Baking the Buns:

  1. When the dough has risen, place it on a lightly floured surface.
  2. Roll out the dough into a rectangle and spread an even layer of custard on it.
  3. Roll the dough along the longer edge, creating a log.
  4. Cut the log into equal pieces and place them on a baking sheet lined with parchment paper.
  5. Let the buns rise again for about 20-30 minutes.
  6. Bake the buns in a preheated oven at 180°C (350°F) for 15-20 minutes until they turn golden.

Serving and Decoration:

  1. Remove the buns from the oven and let them cool on a rack.
  2. Optionally, dust the buns with powdered sugar before serving.

Tips and Variations:

• You can add sultan raisins, candied fruits, or a crumb topping before baking. • An alternative filling can be your favorite jam or cream.
