Vegetables are very important in Irish kitchen. We prepare our dish as Irish people doing. Those people living in traditional cottage in county Leitrim and Roscommon.
Irish roasted vegetables
Sometimes roasting is not satisfactory. We lost vitamins. Some vegetables have a lot of water inside and ca be roasted. If we have occasion is good to not fried them. We will be using cooker to prepare our dish and we will be using a little bit oil and lots of herbs.
Our dish proposal will be called Vegetables Chips. Enjoy.
Serves 3 – 4 people
What we need to prepare Irish roasted vegetables?
½ kg potatoes, carrots and red beetroots
1 teaspoon salt,fresh-ground black pepper and sweet red pepper powder
½ teaspoon chili powder
3 garlic cloves, crushed
2 tablespoon oil/olive – 30 ml
What we do?
We peel vegetables and we chopped like a chips (size will be in our imagination – big or small – how we like). Next, we put all to the bowl and add olive or vegetables oil and next we put the herbs and salt and black ground pepper to taste. We can use more herbs if we likes. Salt and pepper, a little bit red pepper and chili powder will be enough.
We take roasting sheet and we put on this baking paper (to not clean deeply after cook) and put our vegetables chips. Roasted in oven in a preheated 180 Celsius degree 30 minutes.
It is possible eat only our roasted vegetables chips. We can use more salt to taste or some dip – garlic sauce.
It could be added to our dinner and serving with some meat and salad. On the pictures below you can see our vegetables burger made from beetroots and carrots and salad made from carrots and fresh cabbage.
Whatever you do chopped roasting vegetables are very healthy food.
